Italian Zucchini Soup

I saw this one today on YouTube. I will have to try it because I love my zucchini!

Zucchini Soup - Italian Grandma Gina (Buon-A-Petitti channel)

2 medium Zucchini diced large
½ Onion diced
3 cloves Garlic diced.
3 tbs olive oil
Salt and pepper
1 fresh tomato chopped
½ cup fresh basil (use much less if dried)
¼ cup fresh parsley (use much less if dried)
4 cups water
4 0z spaghetti broken small
1 or 2 eggs
2 Tbs grated Romano cheese

Sauté the onion and garlic in the oil. Add the zucchini and sweat down. Add salt and pepper. Add the tomato, basil and parsley.
Cook until the zucchini is about half cooked and then add water. Bring to a good boil and add the broken spaghetti.
When pasta and veggies are done cooking. Stir the eggs up with the cheese and stir them in at the last minute to thicken the soup and add more layers of flavor.
