It is about time for me to cook again. I just finished up the last of my Hamburger Soup last night. These days I am cooking only a couple times a week and then eating leftovers.

I’m doing the same thing FF, it just makes things easier when I’m not feeling good or it’s too hot.

I took some of those thin boneless pork chips, dreged in egg and then corn flake crumbs. SAuteed in some bacon fat. Dinner was smashed russets on the bottom, some sauteed onions, then a pork chop and then some canned chicken gravy with sour cream added. I also made a fresh corn salad with cherry tomatoes, onions, shred carrots, fresh mozz, and balsamic vinegar.

I think the salad will taste better today after marinating all night.

I've never heard of the corn salad. I think that sounds amazing. Is it just the ingredients you listed in any amount?

Kinda like this, but I added in some cubed cuc from the neighbor's garden and I like Italian parsley instead.

Oh, and since the corn out here is miserable and tough, I blanched the two ears for three - four min before cutting off the kernals.

That salad looks good! A salad for the ones that don't like green salads.

Super fast & easy baked chicken breasts:

Preheat oven to 450 and brine chicken in salted water to cover; for 15 minutes.

Pat dry and rub with olive oil and place on baking tray. Spice with garlic, salt & pepper and smoked paprika. Just eat with sides or use in casseroles, chicken salad, whatever.

For mexican flavoring, I use cumin, chili powder and a little cayenne. Tonight's are going to be fajitas.

I had ribs (fully cooked from the deli) that I got on sale and added a salad to make it a meal. I also picked up a rotisserie chicken for tomorrow so I won’t have to cook. |em23|
