How to Butcher a Cow - Cuts of Meat

Here are a couple of butchering videos to add to the collection.

Even if you are never going to butcher a cow, this is good stuff. Watching these videos you can learn about the cuts of meat for cooking and become a smarter shopper in the process.

I was offered the chance to buy a half of a cow. She's currently hanging for two weeks. The butcher says I can order what and how I want it. The very first thing I replied was Give me the offal! And some fat to render. Any suggestions as to what else to ask for? There is just the two of us.

The cow will be $600 and the cut and wrap will be 62 cents per lb. Another place wanted 90 cents per lb.

Have them cut small roasts and package the steaks into smaller packages for a few ideas. With a half cow you will also be able to turn a brisket into a corned beef or two. I have done it with venison and it turned out great.

Talk to the butcher. Let him know your situation and ask for ideas from them as well.

Picked up my half a cow. I got tons of 1 lb packages of hamburger. Then two banana boxes full of cut pieces. I've not taken an inventory, but the best part? They saved three cows worth of liver, tongue, and heart. I wish they would have saved me the kidneys and more. Oh well.

I also got at least 10 lbs of beef fat. Time to learn to render.

I know the organ meats can be delicious if cooked properly, I’m just not a fan of them. I’m glad you got so much of them and will enjoy whatever you make them into.

My DD loves lengua, so the three tongues go to her. I thawed a package of liver last nite, and simmered it. Tasted it. Let me tell you - chicken livers are divine. No so these.....

I'll try that heart recipe. I read all the comments and will incorporate them. Thanks!
