Found this recipe on a local grocery store website and had to try it. It's very good, though on the bland side if prepared as directed. I'll definitely make this again, but will add more salsa, either mixed in or over the top.
Mexican Chicken Bake
2 C. shredded cheese, (save 1/4 C for topping)
3/4 C rice
1/4 C chopped fresh cilantro
1 C salsa (2 C would be better, or pour the 2nd C over the top)
1 C water
4 Chicken breast halves
Mix 1 1/2 C cheese, rice, cilantro, salsa & water together in a baking dish. Top with raw chicken breasts, cover with foil & bake @ 350 for about an hour. Top with cheese (and extra salsa?) and bake another 5 minutes to melt the cheese.

I still haven’t tried this and I need to. I don’t like cilantro either dizzy, it tastes like soap to me.

That's due to genetics. There are places I'll no longer eat because they're heavy on cooking with it.

Thank you ladies for pulling this out, I've been thinking about making this again.
I don't see a problem if you left out the cilantro or substituted something else like parsley, it should still work. I think most the flavor comes from the salsa.
