Fritters - Magical Meals for Hard Times

Pinto Bean Fritters – Struggle Food for Hard Times – The Hillbilly Kitchen



15 ounce can Pinto Beans or 1 ½ cup leftover Pintos
½ cup Breadcrumbs or Flour or Cornmeal (leftover cornbread)
1 Egg
Milk to adjust consistency
Salt, Pepper and Spices to taste
Options:
½ cup Grated Cheese (add in mix or top)
Sour Cream (add in mix or top)
½ cup Chopped Peppers
½ cup Chopped Onions
½ cup Corn
Leftover fried Potatoes (add in mix or on the side)
And, isn't sanity really just a one-trick pony anyway? I mean all you get is one trick, rational thinking, but when you're good and crazy, oooh, oooh, oooh, the sky is the limit. -The Tick ~~ Bible verse Revelation 6:15-17 - look it up!

Onion Fritters



2 to 2 ½ cups Chopped Onions
¾ cup Milk
¾ cup All Purpose Flour
1 tablespoon Corn Meal
1 tablespoon Sugar
2 teaspoons Baking Powder
1 to 2 teaspoons Salt
½ to 1 teaspoon Pepper
Oil for Frying – Add as needed


Corn Fritters



2 cups - Fresh corn
1 cup - All purpose flour
2 teaspoons - Baking powder
1 1/2 tablespoons - Melted butter
1/2 teaspoon - Salt
1 teaspoon - Sugar
1 - Egg
1/2 to 1 cup - Milk
Oil to fry in
And, isn't sanity really just a one-trick pony anyway? I mean all you get is one trick, rational thinking, but when you're good and crazy, oooh, oooh, oooh, the sky is the limit. -The Tick ~~ Bible verse Revelation 6:15-17 - look it up!

I am making these today... but I am leaving out the corn

Fried Green Tomato Fritters - Greg's Kitchen



3-4 green tomatoes, diced
1 large onions, diced
1 8.5 ounce can corn
1 cup cornmeal
1 cup flour
1 egg
¼ cup buttermilk
½ tsp red pepper flakes
1 tsp garlic powder
½ to ¾ cup light olive oil
pinch of salt and pepper

Directions:
With the exception of the oil, combine together all ingredients . Heat oil in a heavy skillet ( I prefer to use cast iron of course) until medium hot. Shape a small amount of the mix into a 3-4 inch patty and place into pan. Cook at medium high for until browned around the edges. Turn and cook and cook the same amount of time on the other side.

I'll try these! I used to make Zuc fritters, and these will be good too! Thanks.
Found water and ------better weather, yeah, maybe not.....

I made these Green Tomato fritters for my breakfast this morning. I used the little "will never amount to anything" hard green tomatoes that Kid picked off the plants yesterday. No corn. I added some little tiny jalepenos and little tiny green peppers, also from the garden stripping. I did 2 eggs, GF flour and lots of black pepper as well as a teaspoon of sugar to mellow the tartness.

OH MY! So yummy. Hubby wanted just a bit to taste it and then ended up eating two of them.

My mom used to make corn fritters. I’ll have to copy these recipes for my cook book.
