Zucchini Fritters

Just tried a new recipe for lunch and it was YUMMY. Zucchini Fritters! I am posting this one to share. It is a great use for those too big zucchini.

Zucchini Fritters

* 2 cups grated zucchini
* 2 eggs, beaten
* 1/2 chopped onion
* 1/2 cup all-purpose flour (I used GF)
* 1/2 cup grated Parmesan cheese
* 1/2 cup shredded mozzarella cheese (I used sharp cheddar)
* salt to taste
* 2 tablespoons oil (to fry them in)

Basically you grate it all up, whack it all together, stir well and drop by heaping tablespoons full into the hot oil and fry until crisp and brown.

Amazing.

I made a bunch, so I am trying to see if they will also freeze and reheat well. I'll let you know if you remind me.

Those sound good...I wonder if you could sub almond or coconut flour? Maybe I'll give it a try!

I am sure you could. All the flour does is give it a bit of thickening for the cheese to glue to.
