More like white meat. A very light delicate flavor. It does best stewed, cooked moist, or fried because it is so lean.

Is it like white meat or dark meat chicken? I don’t like dark meat chicken.

Are you kidding me? Oh my! It is like chicken only leaner and with a denser texture. Delicious!

We raised them in the garage at the old house for years when the kids were very little.

You both need to hunt down some rabbit meat and give it a try immediately. Ask at the grocery store. Ours carries rabbit, but seldom puts it out in the meat case.

Rabbit Arrabiata - Angry Rabbit Stew

* 1 rabbit cut into 18 bone in stew chunks
* flour, salt and pepper to dredge
* 2 Tablespoons good oil
* 2 onions slivered
* 2 cloves garlic
* 2 cans diced tomatoes
* 2 cups rich chicken broth
* Chili flakes to taste

Dredge meat chunks in flour, salt and pepper and brown well in small batches in oil.
Remove meat and soften up onion in the oil. Add garlic to soften when the onions are starting to color.
Add rabbit back to pan. Cover with tomatoes and juice. Add broth to cover and bring to slow boil.
Add chili flakes and allow rabbit to stew slowly for at least two hours.

Serve over egg noodles, pasta or white rice.
