Butter n lard pie crust

So, I rendered my lard. Gorgeous lard.
I bought organic un-salted butter (I feel like such a failure! ;-)
But I made up for it by grinding the Kamut wheat myself.

Anyways, the recipe:
12 ounces freshly ground wheat flour
8 TB unsalted butter
6 TB leaf lard
1 tsp salt
2 TB apple cider
2 TB (or a little more as needed) sparkling water (from my Sodastream)

I mixed the flour and salt, then adding in the fats, in the food processor, pulsing it until the fats were about chickpea size. Then I pulled it out and finished it with a pastry blender. Now it's in the fridge overnight in two patties. Tomorrow, I'll roll it out for my apple pie.
