Oh, I know, those were her suggestions on the recipe sheet so I just added them for everyone else to have other choices besides the rice. :wink:

No barley or cous cous for you my Gluten Free friend! Sounds great over rice though. YUM.

Cola Braised Pork Stew

Ingredients:
1 TBS Vegetable Oil
2 lbs. Boneless country style pork ribs or pork shoulder, cut into 2" cubes with excess fat trimmed
2 cups Cola (DO NOT use diet cola)
6 Garlic cloves, minced
1 Onion, rough chopped
3 TBS Soy Sauce
2 TBS Fresh Ginger, perled and chopped
1 Bunch Green Onions, chopped

Heat oil in large pot over high heat.

Add 1/2 of the pork, sauté until brown on all sides, about 8 minutes. Transfer pork to a bowl and repeat with the remaining pork.

Add onions ans sweat them giving flavor and color. Return pork to pot.

Take pot off the heat and SLOWLY add the cola. Return the pot to the heat and bring to a boil. Reduce heat to medium-low, cover and simmer 30 minutes.

Add garlic,soy sauce, ginger and 1/2 of the green onions. Cover and simmer until the pork is tender, about 50 minutes longer. Uncover and simmer until the sauce is slightly thickened, about 10 minutes.

Season stew with salt and pepper. Transfer to serving bowl, sprinkle with remaining green onions.

Serve with rice pilaf, barley or cous cous.
