When I was a little kid, Grandma Nettie used to serve me a bowl of soup and some kind of sandwich most every day for my lunch in the summers. After lunch we had Oreo cookies and milk. I think soup just reminds me of her.

Glorified Chinese Chicken Noodle Soup AKA War Mein

Glorified Chinese Chicken Noodle Soup or War Mein


1 or 2 chicken breasts, cut or sliced in large pieces

3 or 4 qts Chicken bone broth

1 pkg noodles

a couple of boiled eggs per person

about 1/2 C of whatever type vegetables per person

about 1/2 C fresh raw greens per person

sliced green onions

I've always cooked everything separate, then assembled in each bowl, but I guess it could all be cooked together.

Bring about 2 C broth to a good simmer & drop in chicken pieces to cook till done. Take out chicken, then drop in veggie mix to cook a few minutes. Pour whatever broth left into large saucepot, with remaining broth & bring to a boil. Add in noodles & cook till done. In each bowl put in some raw greens, add a few pieces of chicken and some veggies, a scoop or two of noodles and some broth. Top with sliced or quartered boiled eggs & green onions.


I've used whatever type of noodles, vegetables & greens I've had on hand. I usually make it with chicken, but beef & beef broth is also an option. Putting raw fresh greens in the bottom of the bowl will get some steeping or cooking when adding the noodles & broth and all nutrients stay in the bowl.
For gluten free diets, there are gluten free noodles or rice noodles are another option.
