Potato Bake

7 or 8 small potatoes, peeled, rinsed, thinly sliced
1/2 large red pepper, small dice
1 medium onion, sliced
6-8 large spinach leaves, cut into ribbons and blanched in hot water
1 1/2 cup of aged cheddar cheese, shredded
3 eggs
1 cup or so of plain, whole milk yogurt

Layer potatoes, onions, peppers, spinach, and cheese until you run out of ingredients.

Scramble the eggs together with the yogurt to make a custard, and pour slowly over the top, until it seeps down into the layers.

Top with the last of the cheese.

Bake, covered, until the potatoes are tender. Let the top brown a bit if you so desire. Alternatively, it can be made in the microwave, covered, until the potatoes are tender.
