This one WILL be getting a try after the holidays. Hubby and I both love fish.

I made my cod for dinner tonight and it turned out fantastic! For the dredging mix I used some gluten free flour blend, salt, pepper, garlic and onion powders, dried parsley and added Idahoan brand Vermont White Cheddar instant potato flakes.

I mixed an egg and milk for the wet ingredients.

I dredged the fish in the coating mixture, then in the egg mixture and back into the coating mixture. I pressed firmly to adhere as much coating to each piece as possible.

Then I fried them in some vegetable oil to brown each piece, turning once. When browned I put them on a rack over a baking sheet.

They were baked in a 350*F oven for 9 minutes or until cooked through.
