This is an old recipe from Grandma Nettie's cookbook from the 40's and something you never see or hear of anymore. I thought I would post it so you all can give it a try. Beets are very good for you and easy to grow, so we need more ways to prepare them I think.
Harvard Beets
* 2 cups canned or pre-cooked beets, cubed or sliced
* 2 T butter
* 1 T cornstarch
* 1 T sugar
* 1/2 cup mild vinegar (balsamic works nice as does rice wine)
* 1/4 t salt

Melt the butter and stir in cornstarch to make a roux. Add sugar, salt and blend well. Add vinegar and cook a bit until thick. Stir in beets and heat through.
Makes 4 - 6 servings.
