Potato Salad

Get thee some potatoes. I prefer a potato with a creamy texture when cooked; Dutch Creams work well. Yukon Golds also work well. Or you can use a combination of different potatoes. Scrub and peel potatoes, dice into 1cm chunks, toss them into a 1 liter size pyrex measuring jug, pour over boiling water, and cook in the microwave (5 minutes cook, 5 rest, 5 cook, five rest, on the high setting) until tender (a fork stabbed through them will pass through easily, and the chunks will slide off by themselves). Drain, and set aside to cool.

Boil three or four eggs to the hard boiled stage. Set aside to cool.

Dice a small white or red onion, finely. Throw in the dish you'll use for the salad.

Add a large spoonful of mayo, a small amount of hot yellow ploughmans or Dijon mustard, black pepper, sea salt, chopped black olives if you like them, and mix well. Taste and adjust accordingly.

Add potatoes and mix until coated.

Peel the eggs once they're cool enough to handle, dice finely, and mix in with the potato mixture.

Refrigerated at least for an hour before serving, even better if you can give it over night.
