Ingredients:
2+ cups of Gluten Free flour blend
1 large egg
1 tsp baking powder
Salt, pepper, garlic powder, onion powder and dried parsley to taste
2+ cups of milk
Mix the flour, baking powder and seasonings together in a large bowl. Stir in the egg then add enough milk to make a thick pancake batter consistency. Allow the batter to rest for 15-20 minutes for the flour blend to rehydrate.
NOTE: You can use this recipe with wheat based all purpose flour for a gluten containing flour dumpling as well. You do not need to let the batter rest if using wheat based flour.
If it’s too thin stir in a bit more flour, if too thick and a bit more milk. You want a consistency that will drop off of a spoon rather than pour out of the bowl. You don’t want it too thick though or the dumplings will be too dense.
Bring your soup up to a medium boil and start dropping spoonfuls of batter into the pot. DO NOT stir the soup for a minute once you have all of the batter dropped into the soup otherwise the dumpling batter will just act as a thickener and you won’t get nice sized dumpling pieces.
The larger the drop of dumpling batter the larger the actual dumpling will become. If you want smaller dumplings use a teaspoon otherwise use a tablespoon for larger dumplings. Give the soup a stir after a minute, if you want larger dumplings then try to not stir for at least 2 minutes. You want the batter to cook and stay together. You need to have the soup at a steady medium boil otherwise the batter will just sink to the bottom of the pot and clump together.
When you have all of the batter into your soup turn the heat down to low, gently stir then cover the pot and cook a few minutes. Stir the soup and continue cooking until the dumplings float, it should only take a few minutes.
These are great in any broth based soup or in a juicy stew. I add them to split pea soup, chicken or turkey soup and beef stew. Use anywhere you would add pasta to give the soup more texture.

I got the chicken and bones cooking tonight. When the broth is done I will try them tomorrow.
