No Sugar Added Oatmeal and Carrot Cake
In this video I show you how to conjure up my absolute favorite oat cake in just 15 minutes. This healthy cake is made from carrots and oatmeal - completely without sugar and without white flour!
It is not only quick and easy to prepare, but also perfect for anyone who values healthy eating. Whether for breakfast, as a snack or as a dessert, this cake is guaranteed to delight you.
Ingredients:
160 g oatmeal. (5.6 oz)
120 ml hot milk. (4 fl. oz)
2 small carrots.
70 g dates. (2.5 oz)
60 grams almonds (2 oz)
Zest of 1 orange
1\2 tablespoons baking powder.
1 teaspoon ground cinnamon.
1\2 teaspoon salt.
Ingredients for icing
200 g Greek yogurt. (7 oz)
300 g cream cheese (or ricotta). (10.5 oz)
60ml honey. (2fl.oz)
50ml heavy cream. (1.7 fl.oz)
Flaked almonds.
She didn’t have written instructions for preparing this cake so I added them.
It was baked at 350*F for 20 minutes in a thin layer. She softened the oats in the hot milk while she peeled and finely shredded the carrots. Then stirred the carrots into the oats and left to combine while preparing the dates and almonds.
She poured boiling water over the dates and set them aside to soften then ground the almonds finely in the food processor. After soaking the dates in hot water until soft, she pitted them and pulsed them in a food processor until broken down into a rough paste.
Then she zested the orange and juice it. She set the zest aside to add to the frosting.
She added the ground almonds, dates and orange juice to the oat and carrot mixture, and stirred to combine everything. Then added the baking powder, cinnamon and salt. Stirred well to combine everything, then transferred to a prepared baking pan. She used a silicone baking pan but you could use a greased or parchment lined pan. She didn’t give a pan size but it looked like large square. I think either a 9x13” pan or a rimmed cookie sheet would work. The finished cake was cut into 4 even rectangles.
While the cake bakes prepare the icing by combining the yogurt, cream cheese, and honey. After it’s well blended add the heavy cream and orange zest. Stir well to combine.
After the cake is cooled cut into 4 equal pieces. Layer the pieces with the icing on a serving plate. Top the cake with slivered almonds and refrigerate for 1 hour to let the icing firm up. Slice and enjoy!
