Gluten Free Chocolate Mug Cake
INGREDIENTS
2 tbsp almond flour
2 tbsp cacao powder
2 tbsp sugar or sweetener of choice
2 tbsp coconut oil or butter
1/4 tsp vanilla extract
1 large egg
1/2 tsp baking powder
pinch of salt
DIRECTIONS
Whisk all of the ingredients together in a coffee mug or bowl.
Pour the batter into your mug or a ramekin if mixed in a bowl and microwave for 60-75 seconds on high, or until the cake is cooked through.
Enjoy plain or top with whipped cream, powdered sugar or berries.
My favorite variation is to use hazelnut flour in place of the almond flour and chocolate hazelnut spread in place of the sugar/sweetener. If cooked only 60 seconds it’s more like a molten lava cake (soft and gooey).

Sounds fast and easy. I will have to give it a try.

It hits the spot when you want a piece of cake without making an entire cake!

That sounds really good. We don’t have a microwave though! I wonder if I could bake it in our little convection oven?

You probably could,it probably would take 10-15 minutes depending on the size of the baking container.
