Alton Brown’s Bfast Sausage Recipe with my mods 08/2021 BW
6 lbs of pork and fat
2 T of salt
1.23 T of black pepper – to taste
2 t paprika for color
1 T of turmeric for color
4 t of fresh minced sage
5 t of dried rehydrated in hot water thyme
2 t of dried chopped rehydrated in hot water rosemary
3 T of brown sugar
2 t of fresh ground nutmeg
1 T any kind of heat to taste – I used home grown ground med heat peppers
2 t garlic powder
2 t onion powder
Cut pork and fat into ½”- ¾” cubes or so. Partially freeze. Using my KA attachment, use the large grinding plate. Drips or so of water will help push the cold meat thru.
Mix all the spices together in a separate bowl. Then mix into ground meat. Make a small patty and cook and taste test. If needed, add more heat or pepper or whatever you want.
Mix with hands over and over. This gets the spices into the meat and helps to bind the large grind by over mixing it all.
Freeze in whatever shape you’d like.
Remember that there are 3 t in one T.
I rehydrated the dry herbs in boiling water for 20 min or so.
