I could have sworn I had already posted this just a few minutes ago but now I can't find it.
This is the standard recipe, but I can really go crazy with ideas for variations of this. Maybe try with broccoli or a mix of veggies, mix in other cheeses as well, add some leftover cooked chicken or sausage or? for a complete casserole meal...YUM!
[/Loaded Cauliflowerb]
1 head of cauliflower, cut into bite sized flowerettes
6-8 slices bacon, cooked & crumbled
6 Tbsp chives or green onions
1/2 C sour cream
2 C shredded Cheddar Cheese
1/2 lb sliced fresh mushrooms
Steam cauliflower pieces to soften, but not quite cooked thru. Mix 1/2 amt of bacon & cheese with sour cream, mushrooms & 4 Tbsp chives/green onions. Toss in cauliflower & mix until well coated. Pour into baking dish and top with remaining bacon, cheese & chives/green onions. Bake @ 425 for 15-20 minutes or until cheese is melted.

I shared this recipe with Geek this morning and he said he would make one alteration to the recipe and according to him it would make the dish 100 times better... although I disagree. He said as the last step, I should fish OUT all of the cauliflower and he would probably love it.
