It would be GREAT to make with canned chicken!
I am considering trying it with some ground turkey (made from home raised breasts). Just saute that with the onions and chilies, add the cheeses and shazaam. First however I have the second meatloaf from yesterday to munch our way through and some left over chili, but soon. Very soon.
