I ordered some 4” & 6” deep sided removable bottom baking pans for making mini deep dish pizzas. I also ordered some removable bottom mini tart pans too.
I plan to make the gluten free deep dish pizza crust recipe and just make small pizzas. There won’t be any reheating of the leftover pizza since the gluten free crust doesn’t taste the same and the texture changes when it reheated.

I don't mean to horn in on this thread.....well, Idk maybe I do........but all this talk of pizza is making me hungry for a good homemade one, but it's too dang hot for the oven.
Anyway. I don't know that I've had a Chicago style with the sauce on top. Deep dish, yes but not with 2nd layer of sauce. I like to use cornmeal on the pan as a dusting so it doesn't stick and it just adds something to the crust. Also I'll sometimes make a cheese stuffed crust. Just put some cheese sticks in the freezer, then cut them into thirds and wrap the edges of dough over them all around. Press or pinch the dough to seal the cheese inside. Then on goes the sauce, a good sprinkle of parmesan, a bunch of mozzerella or Italian mix, pepperoni, italian sausage, canadian bacon (or any meats you prefer), followed by mushrooms, green and/or red pepper and onion slivers & olives. Then a good sprinkling of more cheese to hold everything in place.
We also like the garlic white sauce. #3 had ordered a philly cheesesteak pizza from Dominos with the white garlic sauce on a thin crust one time and OMG it was good. First time I had tried the white sauce. I think I've mentioned it before that Classico used to put out a good white sauce for homemade pizzas, but they stopped making it at about the same time I discovered it and now I can't find it anywhere. I do have 1 or maybe 2 jars of it put away, but I need to learn to make my own, then see if it's something I might be able to can.

No problem crashing OF! The Chicago style deep dish doesn’t have sauce in the bottom of the crust like she did in the video, it makes the crust soggy. It only has 1 layer of sauce and that is on the top to keep the crust crispy.
That white sauce sounds delicious! I’m thinking maybe an Alfredo sauce with sliced Italian beef and shredded mozzarella inside with the crust folded over to make it into a calzone.
Just experiment with making a basic white sauce, add some garlic and other seasonings then some shredded cheese and blend everything together.
I wonder how my homemade Mac & cheese sauce would be but use white cheddar instead of the triple cheddar with some garlic added to it. I thicken my sauce with cream cheese instead of a roux.

I had a GF Bob's Red Mill pizza crust mix that needs to be used up. I am not doing deep dish, but I AM making some little toaster oven pizza's for me and my friend Judy today for lunch. We just talked about it too long. I have to do something. LOL

Well in that case..........I don't remember where I saw it (some channel on uboob) that she made a pizza in a cast iron skillet with a lid, on top of the stove..........if it doesn't cool down enough soon enough here, I may have to resort to that cause I'm in need of a fix

The food was good, but just didn't quite hit the spot. That means pizza will probably be the first thing I make when the weather cools.

My pizza was serviceable. Translation... toppings were great crust not so much, but it did the job. I had my friend Judy over for lunch and we split on little pizza and I had enough ingredients - specifically the gf crust - to make a second pizza. I cut it in half. Froze one half and the other will be lunch... or breakfast tomorrow.
