I usually go camping on foot, so weight is an issue. My favorite trail meal is velveta shells and cheese with jerky or some other meat added.

I finished my camping menu finally, and the plan is to go this weekend. My menu is as follows:
Friday
Dinner: Pizza Pudgy Pies, Chips, Veggies
Saturday
Breakfast: Bacon, Potato, and Egg Scramble, Muffins, and Fruit
Lunch: Beans and Franks, Pan Bread, and Veggies
Dinner: Steak, Potatoes, Corn on the Cob
Sunday
Breakfast: Windows, Bacon, Fruit
Lunch: Pudgy pies/Leftovers

Oh, windows--some people call them Eggs in a Basket. You cut a hole in the middle of a buttered bread slice, and lay it a pan. Then you crack an egg into it and cook, turning once, until the egg is set.
Pudgy pies are made in pie irons. I had never heard of them til I met DH. You put a piece of bread in one side of the iron, and place your filling in the middle (in this case, pizza stuff--cheese, sauce, pepperoni), then top with a second piece of bread, and close the iron. You place the iron right on the coals, and cook a few minutes each side. It ends up being a sort of grilled sandwich. You can fill them with all kinds of things though, like lunch meat and cheese, taco meat, pie filling, marshmallows and chocolate, any leftover bits of food. They're handy for camping, though I'm trying to cut back on bread and refined grains. I'm planning to bake several loaves this week to take with.

Ok, they are also known as toad in a hole around here. We used to make them way back in girl scouts on coffee can stoves.

I tried the grilled bananas with chocolate tucked inside and LOVED it! Was that Patrice who suggested it? Thank you, it was gooooood! And probably much healthier than s'mores.
I also tried to bake cookies wrapped in leaves--something I saw in a book. That failed big time. I don't think I did it right. The problem was, I set them by the coals, but couldn't get them out again. The turned to coals themselves.

Yes it was me, I'm glad you liked it. It is one of my favorites and can be done in the microwave but the marshmallows don't melt.

I didn't put any marshmallows on because I'm being all health nutty, trying to eat mostly whole foods only, but someday, I'll splurge and try it. We don't have a microwave, but I thought I could either bake them in the oven at home, or make a fire outside.
I think we will make a fire this afternoon, actually, because I want to try making smoked beef jerky.
