Red beans and rice....made with pinto beans. But that takes a day or two. Mine are on the 3rd day, as my crock pot kicked the bucket. But I guess it can as it is only about 25 years old |em12|
Oh, I got hubby hooked on that too... :wink:


So...shopping at WM today, I found a Crock Pot Brand for 25.00$ Not bad I think. Just the basic model. Bells and whistles don't usually make things any better. Just more complicated.

Well fiddlestix.....I only have one package of hamburger left in the freezer and trying to hang on to it until payday to get some buns for Sloppy Joes. We haven't had those in a long time and sounds good for a change. I don't think anyone else would eat the rice & beans |em3| I ended up taking out some pieces of round steak....think I'll Swiss em over taters |em24|

My hubby is a picky eater too. Not to mention the foods he is allergic to...mushrooms, garlic, soy, amongst others. |em3|

Cajun Beans and Rice

Dried beans -Red, or pinto works too

Cook dried beans till they are nice and edible looking. The broth should be thick and like a soup.

Diced onion
Sliced Kielbasa

Add the diced onion while the broth is still watery.
Slice a package of kielbasa sausage

Toss in the sausage about 1 hour before serving. The sausage flavors the beans beautifully.

You can add other seasonings;

Green pepper diced
pepper flakes
hot sauce
celery-diced

Served over fluffy white rice. Also a nice hot pan of cornbread goes with it too.

I have only been making this dish for 25 years..and this is the version that I like best.

Tonight we had hash 'n' eggs. I used the last of the pork roast, taters, a nice sized leek, half of a big yellow onion and some of the pork roast broth. Once the hash was done I scooped out little hollow spaces and dropped in some fresh eggs, then turned the pan way down.

Good dinner for a cold night.
And, isn't sanity really just a one-trick pony anyway? I mean all you get is one trick, rational thinking, but when you're good and crazy, oooh, oooh, oooh, the sky is the limit. -The Tick ~~ Bible verse Revelation 6:15-17 - look it up!

I've got pizza sauce simmering on the stove, and the dough for the crust mixing in the bread machine. A pound cake is baking in the oven, and I'll be making a chocolate glaze for that (it's Lily and Palmer's birthday cake). I also need to slice potatoes because I'm going to fry up my own potato chips in lard too.

I am almost completely out of potatoes and onions. Everything I felt like making needed both. So, I just "cooked" some frozen pizza for dinner. I'm thinking of bed.

Tonight is Impossible Quiche. But I don't use the Bisquick, I just make my own mix.

I made 2 quiche on Monday!! Mmmm....
Tonight....Ima try to talk hubby into burger king. Termite guy was here for 3 hours.... and I have nothing set out for supper.
