Last night was homemade veggie beef soup (Thank you MIL) and some decent cornbread. Even hubby approved the new cornbread results!

Tonight here was;
Grass fed beef roast-pressure cooked to perfection.
Creamed potatoes
Cornbread fro, scratch
Fresh coleslaw
Dessert-bowl of ice cream

Ok folks, now that I'm home, I need all the ideas I can get and please include the recipe
Tonight I'll fix Pepper Steak over rice, since hubby mentioned it last night....that is, after I go to the store to pick up some peppers

I found some pork necks on clearance so bought three packages. I cooked them in the crock pot yesterday, deboned and separated the meat from the broth. skimmed off the fat this a.m. and will throw the meat and a can of black eyed peas and old can of lima beans into it. Add onions, carrots and several handfulls of dehydrated lettuce (yes, it works!). Serve over rice.

Those pork neck bones are one of my hubby's favorite meals! He likes them with a BBQ sauce and some beans cooked along side.

I browned up some ground beef and onion, then made a cream sauce and put it on top of mashed potatoes. I just wish I had made more potatoes.
