Now that sounds scrumptious too |em24| But I'll put that down for later in the week. I'm hoping there will be enough leftovers from the roasted chicken tonight to make sandwiches this week for hubby & D3's lunches. If not, they may be stuck with PB&J's :lol:

Although I may need to wait on that chili after all......hubby usually doesn't like to eat beans too early in the week so as to not gas everyone at work |em26|

You'd surely think so anyway :lol: But he's kinda weird about things like that. He'd much rather stink us out at home, maybe because he knows he has plenty of competition :eek: |em12|

We have an invite for dinner tonight. D2 is making Cabbage and Kiełbasa soup, GF corn bread and chocolate cake. YUM! ... and I don't have to cook it.

Tonight I had taken out some chicken breasts for Lemon Pepper Chicken. It turned out so good, even hubby wanted anything left to be put in his lunch for work tomorrow :eek: I was shocked since he had just said while it was still cooking "why do you always force this weird stuff on me?" I've made it before & it was good, but for some reason tonight it was GRRRREAT |em24|

The sauce would also be nomolicious with Shrimp or most any fish, but add a good sprinkling of dill too.


Lemon Pepper Chicken

2 or 3 chicken breasts, sliced across to make 1 inch thick slices
2 Tbs butter
2 lemons
fresh cracked pepper
2 or 3tsp of a good strong garlic salt* (add 1tsp at a time & taste after each addition, just so it's not overboard)
flour & water slurry

Brown chicken pieces in hot butter in large skillet. Squeeze lemons & pour juice over chicken, top with cracked pepper. Remove chicken pieces to a warm serving platter to make the sauce. In the juices in the pan, stir in the garlic salt until it starts to bubble. Mix up the slurry & pour in just enough to lightly thicken the sauce. Add additional salt & pepper if needed. Pour over chicken pieces to coat. Serve hot & enjoy |em24|

*I used McCormick 'California Style' coarse grind garlic salt. One whiff of that stuff made my eyes water from the strong garlic, but turned out to be perfect in the sauce.
All the flavors of the lemons, fresh pepper, & garlic were doing happy dances in our mouths :lol:

As for sides, I did a small box of rice-a-roni and 2 pints home canned, home grown green beans


Tomorrow's supper plan?

Ham & 3 bean soup with homemade cornbread. I saved the shank bone & any leftover ham from Christmas dinner just for this purpose.

Still too warm here...68*..and rainy here. I am making;

Tater Tot Casserole

Green beans- (frozen pressure cooked taste the best)
Ground beef -fried up
Diced onion-sauteed
Can or 2 of basic tomato soup-mixed with maybe 3 T worcestshire sauce
salt & pepper

layer in baking pan.....leave off tots. They go on top.

Bake in 375F oven, for 45 minutes..or at whatever the tot bag says.

Once it is hot and bubbly, toss the tots on top..bake till browned.
