This soup is so easy to make-and taste good to eat. It's also fairly cheap to make as well. Perfect for those cold winter days.
Ingredients
1 chicken carcass
Water
Carrots, celery and onion-how ever much you want to put in
2/3 cup rice
12 ounce bag of frozen, cut leaf spinach
Seasoning to taste
Put chicken in large stock pot w/water and boil for several hours. Add more water as needed.
Refrigerate at least overnight, then skim off fat.
Strain the water into another pot-if it gels up, you may need to heat slightly.
Remove meat from carcass and add to pot.
Peel carrots, then chop them, the lettuce and onion, add to pot.
Add rice and spinach.
Heat to boiling, cook for 1/2 hour or until rice is cooked.
Add seasoning to taste.
Remove from heat, and enjoy!
