I seen this on a YouTube video and wondered why I never thought of it before since I've usually just tossed out the peelings from potatoes without a second thought. But waste not, want not......right?
Take the raw peelings from potatoes & toss with a bit of oil, salt & pepper and bake in the oven a few minutes till lightly browned and crispy.
These were pretty good, but mine got a bit over browned because they do cook up fast. But then I was wondering how other vegetable peelings would work and different seasonings (taco taters, ranch carrots, garlic zucchini, etc) It would be a great experiment with the different flavors & combinations.
When the kids were little I would put cinnamon & sugar on apple peelings &/or leftover pie crust strips & bake a few minutes
