Thanks for posting this! It is a lot easier to grow squash the coconuts in Missouri for certain! LOL. The only think I hesitate at is this line:

"5 pounds of yellow squash for each cup of finished squash flour"

Wow. We need to grow a whole LOT of squash.

Sounds like it but if it makes a moist finished product that doesn’t taste like squash then I’ll be happy. I’m not terribly fond of coconut flour because it tastes too heavy of coconut and can drown out other flavors in recipes you use it in.

Looks like we should be aiming for those baseball bat zucchini now. LOL.

Yep, definitely if I can get another zucchini to actually grow on my plant.
