This looks good and you could substitute gluten free flour for the regular flour. I think I’m going to give this one a try but I might substitute shredded zucchini and some asparagus for the potatoes and spinach since I already have that on hand.

That looks like ... with some extra garlic because you can't have enough of that... something that would go great with some pasta.

Yep, or even as a bread substitute with a thin slice of meat and cheese inside 2 pieces for a savory breakfast sandwich.
