What do you do with zucchini????

Today my friend made zucchini boats out of one of the big ones I took to her yesterday.

She par baked the zucchini then stuffed it with sautéed ground turkey combined with a bag of riced cauliflower and sweet potato mix from Aldi and some mango salsa.

She baked them for about 20 minutes to finish cooking the zucchini then topped them with shredded Colby Jack cheese and put them back in the oven to get the cheese brown and bubbly.

She’s taking one half for lunch tomorrow and the other half on Tuesday. I said the turkey, cauliflower and sweet potatoes will grab the flavors from the salsa as it sits in the refrigerator overnight.

Big ones work for that as well and those are delicious.

Mock pineapple and mock apple pie filling are also good uses for zucchini baseball bats.
