This looks amazing. I am going to make the coconut version first.
IMPOSSIBLE Pie - coconut or vanilla or other
* butter for the dish
* ½ cup flour – your choice
* 4 eggs
* 2 cups milk
* 6 T melted butter - cool
* 1 cup sugar
* 1 t baking powder
* 1 t salt
* 2 t vanilla or other extract
* 1 cup coconut optional
Mix all ingredients in a blender or mix until frothy – adding the coconut or “extras” last.
Pour into a well buttered pie pan and bake at 350. Until set done (like a custard) slightly cracked and brown. Let cool naturally and completely before serving. It will settle as it cools.
