Irish Cabbage, Bacon and Potato Casserole

This Irish-inspired casserole is a warm, comforting dish layered with creamy mashed potatoes, buttery cabbage, crispy bacon, and a cheesy, crunchy topping. It combines traditional Irish flavours in a rich, satisfying bake perfect for family dinners or cosy gatherings.
The cabbage and bacon give it a classic Colcannon-style feel, while the cheese and buttery cracker topping add extra indulgence. With a creamy, savoury base and a crispy golden finish, this casserole is the ultimate Irish comfort food—hearty, simple, and flavorful.
Serve it as a main dish or a side, and pair it with a simple brown onion gravy for an extra Irish touch.
Ingredients:
For the Base:
• 6 slices bacon, chopped
• 2 pounds (900g) potatoes, peeled and cut into chunks
• 1 head cabbage, roughly chopped
• 1 large onion, finely chopped
• 2 cloves garlic, minced
• 4 tablespoons (60g) butter, divided
• ½ cup (120ml) milk or cream
• 3 green onions, finely chopped
• Salt and pepper, to taste
• 2 cups (200g) shredded cheddar cheese (or any strong, mature cheese of your choice)
For the Topping:
• 1 sleeve Ritz crackers, crushed (about 32 crackers)
• ½ cup panko breadcrumbs (for extra crunch)
• 4 tablespoons butter, melted
• Extra cheese for topping
For the peels
• potato peels
• little oil
• salt
Bake 180 until crispy
For the Onion gravy
• onions sliced
• water
• pinch of salt
• sugar
• gravy granules or powder
Oven: Bake at 360°F (180°C) for 15-20 minutes or until golden brown and bubbling.
