I'm sure this could well fit into 'what's for supper' thread, but my point in giving it it's own space is so I can track & share recipe ideas that is catered to healthier options. My kids & hubby up until now, have been more insistent for heavier comfort & crap foods. Now with hubby's health concerns, he is forced to accept healthier options and it gives me more freedom in the kitchen. When I was taking care of Ma & Auntie, I had free reign with meals to experiment with different foods, flavors, techniques, etc and they welcomed it....even my failures.
During that time, I tried to learn as much as I could about medical specific foods & cooking options. As in diabetic, heart related, kidney problems that needed no sugar/carbs, heart healthy fats to use, and less fluids, no or low sodium, etc. I had seen a show on Food Network about using veggies to bring out natural flavors or to enhance them or whatever to make a salt free meal more palatable and stay away from the salt shaker. My only limits were what would directly effect their primary health issues.

Anyway, this is open for anyone to share recipes & ideas that are for the more health conscience. Even if it means tweaking those old heavy comfort foods into a lighter & healthful version. So here is one of mine from yesterday. Tonight's plan in for some kind of Mexican Steak Roll Ups, but since I haven't got it all figured out yet I'll post it later.

Chicken Pasta Green Salad

1 or 2 skinned, boneless chicken breasts, sliced 1/4 inch thick
1-2 Tbls. olive oil
salt & pepper to taste, optional
2 C. rotini pasta, cooked al dente & drained
4-6 C. leafy greens (choice of lettuces, spinach, kale, collards or others to make a good healthy mix)
1 lg tomato cut to desired shape/size (chopped, wedged, sliced)
1 medium cucumber, with or without peel, sliced
1 carrot, peeled of outer skin, then continue using peeler to cut/slice thick shreds or ribbons into salad mix
1/2 C chopped broccoli, cauliflower bits
1/2 C sliced bell peppers (green is great, red, yellow, orange add more color)
1-2 stalks celery sliced or diced
1 can whole black olives
boiled eggs (at least 1 per person)

Add olive oil to skillet on medium high heat, swirl to coat bottom of pan. Add chicken pieces & cook until no longer pink and juices run clear. Drain & set aside to cool. Cook pasta, drain & cool by running under cold water, set aside.
As for veggie choices, only your imagination & particular tastes are the limit here and you can add or subtract to suit your family's preferences. Just so that there is plenty of different veggies included.
I had mixed up all the veggies & pasta in a large stainless steel mixing bowl & topped it with the olives, eggs and chicken pieces.

Other options for including in the mix? Nuts, seeds, raisins, cranberries, apples, mandarin oranges, croutons, bay shrimp, sliced beef or whatever you like & want to add. It's all good & there is no wrong or failure with this one. The possibilities are endless. |em24|

Great idea for a thread! Thanks for starting it.

Recipe looks darned good too. I love stuff like this for summer dinners.
And, isn't sanity really just a one-trick pony anyway? I mean all you get is one trick, rational thinking, but when you're good and crazy, oooh, oooh, oooh, the sky is the limit. -The Tick ~~ Bible verse Revelation 6:15-17 - look it up!

Farm, YES you are so right and especially if adding fruits and/or seafood such as shrimp or crab, maybe even some precooked scallops, small oysters or clams or even fish.
Another note on this is dressing choices. Last night we just used Ranch, which is hubs & kids go to stand by. It's good & all, but that, blue cheese and Thousand Island are just a bit 'heavier'. Other options would include....

French or Catalina
Olive oil & red wine vinegar
seasoned rice vinegar
lemon wedges for fresh squeezed juice (good overall choice with or without seafood)
or even to use orange juice too for a different flavor

And another option for a topping would be shredded cheese of choice.



As for the Mexican Steak Roll Ups & meal, that is still more in the planning stage & has been moved to tomorrow so I can do more prep work to do it 'right' by soaking some beans overnight, letting the meat marinade longer for more tenderness & flavor, etc. But still final finishes won't be posted until it comes together.
Instead, for tonight will be sliders with the leftover salad (it was huge).

Sliders

1 pkg of slider buns
Sliced cheese of choice (I think I'll go with cheddar & some swiss that's hanging around from previous lunches)

1lb lean burger
1/4 C EACH chopped onion and bell peppers, sautéed in a little butter just till softened (1 or 2 minutes, max)
fresh cracked pepper
some kind of steak seasoning

Mix burger, veggies & seasonings together in a bowl. Pinch off a small hand full, roll into a ball & flatten to size. Should be just a bit wider than the buns and an inch or more thick. Cook in a hot skillet until done & juices run clear, turning after several minutes for the other side. Top each burger with a slice or two of cheese while still in hot pan & cover while taking pan off heat source to melt the cheese.
Prep the buns to everyone's choice. Buttered, mayo, ketchup, mustard, toasted or plain. Once the cheese is melted, put burgers on buns and serve.

Mushrooms could be another option, either in the burger mix or sautéed on the side for a topper. |em24|

You're a little too far away. And I may try it w/shrimp-especially if I can get the little ones for a good price.
