I love Pica De Gallo with lots of garlic & cilantro & fresh tomatoes, peppers, onions, splash of vinegar and a dab of seasonings.

I've tried to can this mix, but it just doesn't taste quite the same as fresh. As my tomatoes have been slowly ripening a few at a time, I've been putting them in the freezer (along with other veggies) until I feel up to a big canning session and in the meantime I'm looking for a good salsa recipe that includes lots of the above mentioned veggies and plenty of 'sauce' that has lots of flavor and just a bit of heat.
What is your favorite Salsa recipe?
