Dehydrated Eggs

I have finally got into using them. I dehydrated bunches of them in 2015..when we had so many hens laying.

I have found that re-hydrating the eggs for just eating.....2T to 1/3 c. warm water. I just mix it up and let it set till I get ready to use them. Then I beat 1 or 2 fresh eggs in the mix, adding some half & half. It makes edible scrambled eggs for breakfast. Not near as rubbery as just trying to use the dried eggs/water mix.

Now, the next step is to try to incorporate the dried eggs into recipes. Dehydrating them for home use, produces a whole

The hens are down to 1-2 eggs a day now. Time for the "babies" to step up to the plate |em12|

Oh, does anyone else use home dehydrated eggs?

I have in the past. These days I usually just freeze the extra's into "ice" cubes.

I wasn't sure how to go about just freezing them fresh. The info I turned up mentioned something about mixing with salt.

I just scramble them up with a dab of salt and dump them into an ice cube tray.
