2 tsp garlic powder
2 tsp paprika
1/2 tsp rosemary
1/2 tsp sage
1/2 tsp cayenne
1/4 tsp chipotle rub
2 tsp salt
1/2 tsp dry mustard
1 tsp black pepper
1/2 tsp oregano
1 tsp parsley
1/2 tsp thyme
Stir or shake well to blend, store in a cool dry place.

What do you use to dredge the chicken in? Lately I have been using a blend of corn flour and GF oat flour for mine.

I use my gf flour blend, it's a mix of potato starch, rice four and tapioca flour.
I mix together some milk, white vinegar, hot sauce, salt and some of the seasoning blend to brine my chicken in first.
Then I take some of the brine and add it to the flour with more seasoning blend added to it. I use just enough liquid to make small crumbs when whisked together, to coat my chicken. You get a really nice crispy chicken after it's fried. I use peanut oil to fry my chicken because it gives a better end result.
