Oh my googlie goodness. This one makes me drool for certain.

And, isn't sanity really just a one-trick pony anyway? I mean all you get is one trick, rational thinking, but when you're good and crazy, oooh, oooh, oooh, the sky is the limit. -The Tick ~~ Bible verse Revelation 6:15-17 - look it up!

I worked at a family owned fast food restaurant for a while before I had kids. They make their own hand breaded onion rings. After watching the recipe today I gotta take the time sometime this summer and figure out a good GF onion ring recipe.

Farmfresh the gluten free beer batter recipe I use for my fish would work good for onion rings. You would dredge them in corn starch first then dip in the batter and drop them in the hot oil individually. I’m going to try a blooming onion in that batter next time I make it.

Hmmmm. That sounds like an idea. Maybe... on a day I have time and energy to make the mess I will be trying it.

I picked up some chicken breasts to batter and fry with that beer batter because I really like the taste and texture of it.

I have never been a great fan of beer however... do you think GF hard cider would substitute?

I don’t use beer in the batter, I use club soda. You need the bubbles to make the batter light and puffy.

I might have to look into that. I don't drink, tried beer once-it was horrible!, so I'm not about to use a beer batter. But, club soda, that's a whole different story.
