Gluten Free Beer (Club Soda instead of beer) Battered Fried Chicken

I used the same recipe for the fish and subbed in chicken instead. It is very good but next time I need to season the chicken strips before battering them. I may also try using my homemade fried chicken seasoning blend instead of the seasoning the original fish batter recipe called for just to give them more flavor.

This is a good kid friendly recipe!

It was funny, I snuck some this morning before Percy got up. :eek: They were completely gone when he got up but his nose was going 240 because he could smell the plate on the table. :lol: He ran to the refrigerator and sat down in front of it. |em29|

I gave him some of the leftover cheesy chicken and rice casserole with his dry kibble mixed in but he wanted some of the battered chicken’s crispy edges like he got last night. :sad: He eventually decided the cheesy chicken casserole would be good enough for now. |em20|

:lol: Callie will come into the kitchen and look at the fridge, then come over and look at me wagging that little stubby tail. Normally, I don't give her anything from there-except carrots. However, today, she was bad. She got out of my field and wouldn't come to me. I had a horrible time catching her. So, when I got home, I got some of the leftover chicken and worked outside w/her on coming. Since she wanted the chicken, it wasn't a problem.

If Percy is outside and won’t come in I grab anything from the fridge and wave it around while asking him if he’s hungry. He comes running in and then he gets nothing but scolded for ignoring my calls to come in the house.
